Salmon on Creamed Egg Cucumber Crackers

Ingredients (makes approx. 20-24)

  • 2 telegraph cucumbers (or 4 Lebanese cucumbers) sliced in 5mm slices

  • 6 large pasture raised eggs (hard boiled)

  • 6 slices smoked salmon (sugar-free), or flaked (sugar-free) smoked salmon fillet – the one you get in a cryovac pack

  • 3 Tbsp sugar-free Mayo (home-made or good quality, sugar-free store-bought Mayonnaise)

  • Freshly ground Himalayan rock salt and black pepper

  • Dash of chilli powder

  • 2 Tbsp capers

  • Dill

Directions

  1. cream the boiled eggs along with mayo, salt and pepper and chili powder if using in a small food processor (I prefer the creamy outcome to mashing with a fork which leaves the eggs a bit lumpy).

  2. Spoon a little creamed egg onto a slice of cucumber and top with salmon, two or three capers and a small sprig of dill. And repeat.


Alternative Toppers to Salmon 

  • Cooked Shrimp or small Prawns 

  • Flying Fish Roe OR 

  • Replace the Creamed Egg with Creamed Tuna (Tinned Tuna mixed with mayonnaise, lemon juice and salt/pepper)
