Mini Frittatas

Makes approx 24

Ingredients (makes approx  24)

  • 8 Large eggs, whisked with ¼ cup full cream coconut milk, ½ cup water and some freshly ground salt and pepper to taste.

  • Add whatever fillings you have or like, eg:

  • Asparagus pieces

  • Baby spinach

  • Basil

  • Bacon/ham/turkey

  • Diced green capsicum/bell pepper

  • Steamed broccoli or beans

Directions 

  1. Lay the vegetables into the cups of a greased mini muffin pan and pour the egg mix over the top, being careful not to fill to the brim as the eggs will rise.

  2. Bake in a hot oven (180 deg C/355 deg F) for around 15-20 min or until a skewer comes out clean when inserted into the centre of a frittata
