Mayo Herbed Chicken in Witlof Cups
Makes 12-14
Ingredients (makes 12 - 14)
2 large chicken breast filets
1 ½ cups mayonnaise
½ cup chopped herbs (eg., parsley, dill, basil, coriander/cilantro, chives, etc.)
Freshly ground Celtic or Pink Himalayan Rock salt and black
Directions
Poach the Chicken breast filets in a steamer or gently simmer in just enough water to cover the filets for approx 20 min or until just cooked (overcooking will make them tough).
When cool enough to handle, finely dice the chicken then mix together with the herbs, salt and pepper and mayonnaise.
Spoon into the witlof or baby Cos lettuce cups.
Garnish with slices of cucumber, avocado or herbs.
