Mayo Herbed Chicken in Witlof Cups

Makes 12-14

Ingredients (makes 12 - 14)

  • 2 large chicken breast filets

  • 1 ½ cups mayonnaise

  • ½ cup chopped herbs (eg., parsley, dill, basil, coriander/cilantro, chives, etc.)

  • Freshly ground Celtic or Pink Himalayan Rock salt and black 

Directions

  • Poach the Chicken breast filets in a steamer or gently simmer in just enough water to cover the filets for approx 20 min or until just cooked (overcooking will make them tough).

  • When cool enough to handle, finely dice the chicken then mix together with the herbs, salt and pepper and mayonnaise.  

  • Spoon into the witlof or baby Cos lettuce cups.

  • Garnish with slices of cucumber, avocado or herbs.
