Mini Moroccan Spiced Chicken, Skewers
Makes 12-14
Ingredients
1 kg (2lb) chicken breast fillets (or alternative meat such as beef, lamb, pork venison, bison, etc) cubed into 2.5cm (1”) cubes
1 - 2 red onions cut into similar sized pieces.
1 - 2 green capsicums (bell peppers), cut into similar sized pieces.
A good Quality Moroccan Spice Mix OR
1 Tbsp each of the following spices:
ground Cumin, ground Coriander seed, ground Paprika and ground Ginger
Freshly ground Salt and Pepper
Directions
Mix the spices, salt and pepper together if not using the Moroccan Spice blend.
Toss the chicken through the spices and thread 3 pieces onto a metal skewer with a slice each of onion and green capsicum to separate the chicken pieces.
Cook on a medium char griller until cooked through (for chicken) or cooked to your liking for beef, lamb, Venison, pork etc.
You can also make salmon or a firm white fish skewers using the same spice mix, or simply salt and pepper
Serve with a huge salad
