Mini Moroccan Spiced Chicken, Skewers

Makes  12-14

Ingredients

  • 1 kg (2lb) chicken breast fillets (or alternative meat such as beef, lamb, pork venison, bison, etc) cubed into 2.5cm (1”) cubes

  • 1 - 2 red onions cut into similar sized pieces.

  • 1 - 2 green capsicums (bell peppers), cut into similar sized pieces. 

  • A good Quality Moroccan Spice Mix OR

  • 1 Tbsp each of the following spices:

  • ground Cumin, ground Coriander seed, ground Paprika and ground Ginger

  • Freshly ground Salt and Pepper

Directions

  1. Mix the spices, salt and pepper together if not using the Moroccan Spice blend.

  2. Toss the chicken through the spices and thread 3 pieces onto a metal skewer with a slice each of onion and green capsicum to separate the chicken pieces. 

  3. Cook on a medium char griller until cooked through (for chicken) or cooked to your liking for beef, lamb, Venison, pork etc.

  4. You can also make salmon or a firm white fish skewers using the same spice mix, or simply  salt and pepper 

  5. Serve with a huge salad
